3 tomatoes
2 cucumbers
1 small bunch of small scallion onions, diced small using most of green
1 handful of mint leaves, chopped
3 squeezed lemons
1/2 cup of Mazola oil (olive oil leaves a film when chilled for salad or dressing)
4 cloves of garlic

Directions:
Directions:
Chop garlic, mash with fork. Add salt, mash in mint, add lemon juice. Stir in tomatoes and cucumbers which have been diced into small bite size pieces, add oil and onion. Toss gently. Pour into large jar, cover and refrigerate. Serve with Lebanese bread that has been baked until crispy in oven and break into pieces. Add to salad before serving.

Lebanese cooks use small cucumbers called Miteh found at the Holy Land or Bill's Market on Lake street. Once you start using these you will be hooked and unable to eat regular cucumbers again.
