3 cups cooked sweet potatoes ( I use canned, drained)
1/2 cup sugar
1/4 cup milk
1 tsp vanilla (add to milk)
2 eggs
1 stick butter (softened)
Pinch of salt

Topping :
3/4 cup brown sugar
1 stick of butter (softened)
1/2 cup flour
1 cup chopped pecans

Directions:
Directions:
Mash sweet potatoes in a large pot; stir in the next 6 ingredients. Place in a lightly greased casserole dish. In a separate bowl, mix together brown sugar, flour and nuts and crumble in a stick of butter. In small pieces, sprinkle over potatoes to cover. Bake at 350º for 30-45 minutes.

This is one of those recipes that I usually double up on as it is Russell's and Ryan's favorite. Kind of a fun one to get your hands into. As for me, I don't like sweet potatoes but I always have people ask me for this recipe :)
