This recipe allows for a great way to share a birthday celebration with someone you cannot physically be with (i.e. Soldier, college student, etc.).
Purchase canning jars; wash in warm soapy water and allow to dry completely. Spray inside of jars with cooking spray, making sure to wipe excess off rims. Mix cake per instructions. Pour 1 c. of batter into each jar, again making sure that rims are clean. Place jars on baking sheet. Bake at 350ºF for 25-30 minutes. As soon as cakes are done, shake off any condensation from jars. Place lids on jars and screw on rings as tightly as possible. Set jars aside and wait for “ping” sound as they seal. NOTE: Do not send any jars that do not seal properly. In a mailing box, consider packing birthday plates and napkins, confetti/birthday tissue paper, balloons, a wickless candle that plays “Happy Birthday”, a disposable camera, a can of premade icing, plastic forks, and a plastic knife with the jars of cake. See what configuration your loved one creates for their unique birthday cake! And there you have it, a birthday party in a box! 1 cake mix yields 6 jars.
