3/4 stick margarine
2/3 cup sugar
1/4 tsp. salt (optional)
1/4 cup milk (coffee whitener)
1 1/2 tsp. baking powder
1 3/4 cup flour
1 tsp. vanilla extract
1 egg
1 T. instant coffee dissolved in 2 T. boiling water
1 T. coffee liquor (optional)
3/4 cup chocolate chips

Directions:

Preheat oven to 375º. Line muffin pans with muffin cups.

In a large bowl, beat butter and sugar till light and fluffy. Add egg, vanilla, coffee and liquor (optional) and mix well.

Add remaining ingredients besides chocolate chips and then mix. Fold in chocolate chips. Divide batter among muffin cups.

They're so good that I double the recipe and freeze some. When you wanna eat one put it in the microwave for 45 seconds and eat it with a cup of milk....it's really delicious!
