2 c. Red Wine Vinegar
1/2 - 1 c. Red Wine (Burgundy)
2-3 tbsp. Worcestershire Sauce
2-4 tbsp. Liquid Smoke (Hickory)
4 cloves Garlic (Mashed)
1/4 c. Vegetable Oil
1/4 c. Lemon Juice ( Fresh)
4 generous dashes of Hot Sauce of choice

Take marinade & cut with 1c. Water for each cup marinade to use in water pan of smoker.Fill pan completely.

Can also marinade pork butt in marinade overnight before oven roasting, and basted butt during cooking.

FOR RIBS:
Marinade ribs at least overnight in pork marinade. Puncture well the rib meat to absorb marinade, turn several times during 24 or period. Add marinade/water mix to water pan in smoker as with butts but reserve 1 cup to hand baste ribs during smoking. Ribs should develop a nice reddish -brown color. During last 15 min. glaze ribs with favorite barbecue sauce, like K.C. Masters.
