Pie Crust, baked (small like Marie Calendar, double filling for 9" crust)
7 tbsp cornstarch
1 cup sugar
1 1/2 cup hot water
3 egg yolks, beaten
4 tbsp butter
dash salt
1 tsp grated lemon rind
1/2 cup lemon juice

Directions:
Directions:
Mix cornstarch and sugar in saucepan, add water. Cook until thick, about 10 minutes. Pour about 1/3 of the mixture into egg yolks, mix. Pour back into saucepan, mix, add salt and butter; stir. Add lemon rind and juice, mix until smooth. Pour into prepared pie crust. Chill.

You can freeze, uncovered first, then package. To eat, set out 2-3 hours then serve.
