4 firm pears
3/4 cup Marsala cooking wine
1 tsp. vanilla extract
2 tbsp. brown sugar

Peel pears, leaving stems intact. Cut a thin slice from bottoms so pears will stand upright. Stir together Marsala, vanilla, and brown sugar in a large saucepan tall enough for pears to sit upright when covered; add pears. Bring to a boil; reduce heat, cover, and simmer 45 minutes. Serve pears at room temperature. This is pretty served in a stemmed compote. Top pear with a spoonful of sauce before serving.
