Cube of salt pork
1 cup (approx) chopped ham
Salt and pepper
Ketchup
Cheese
Hot sauce-optional

Directions:
The night before you want to eat these, pour beans into stock pot after rinsing beans in strainer. They will more than double in size and the liquid and meats will add to the volume so try to judge accordingly. I usually start with about 3 cups of dried beans. Fill pot almost to top with water and cover. Let beans soak overnight. Around noon, drain and rinse the beans again and put in fresh water, making sure the water is a few inches higher than the beans. Add the salt pork and let the beans boil gently for several hours, stirring occasionally. When the beans are getting very tender, add the ham and salt and pepper and let cook 30 to 60 more minutes. When it's done, spoon into bowls and squirt ketchup in to taste. It should be 3 to 4 Tbsp. per bowl. Then top with cheese, jalapenos, hot sauce, or whatever you want. So good served with home made wheat bread.

You can also leave out adding the ham at the end and drain off the liquid to use in Mexican dishes, such as burritos or enchiladas.
