2 lb pork shoulder cut into 1/2"-1" cubes
1 tsp salt
pepper
1 tsp cumin
1 tsp oregano
1 can green chilies
2 30 oz cans hominy
2 onions, 1 finely choped, 1 diced(save for garnish)
2 large cloves garlic
1 can corn

Garnish
1 bunch cilantro, chopped
2 radishes, chopped
1-2 avocados
2 limes cut in wedges
lettuce, shredded
sour cream

Directions:
Directions:
In a large pot, add pork, salt, pepper, cumin, oregano, chilies, and liquid from hominy. Add enough water to cover meat. Bring to boil. Skim off any foam. Reduce heat, add onion. Cover and cook at low simmer for 1 hour.
Add corn, hominy and garlic. Cook uncovered at medium until soup is thick and meat is tender (about 30 min).
Assemble garnished and let guests garnish with their favorite toppings!
