4 c cooked mashed sweet potatoes
1 egg
1 tsp vanilla
1/2 tsp salt
2 tbsp butter
Topping:
1/3-1/2 c butter
1 c brown sugar
4 T cream
1 c coconut
1/2 c chopped pecans

Directions:
Directions:
After mashing sweet potatoes, add next 3 ingredients, Mix well and spread in a greased casserole. To make topping, heat butter, sugar and cream, stirring constantly. (Do not boil or topping may harden when cooked.) Add coconut and pecans. Spread on top. Refrigerate until ready to heat. This can be warmed at any temperature. (325º for 20 minutes works well). Should be bubbling hot to serve.
