1 Pound Ground Beef ( Lean )
1 Pound of Ground Pork
1 Can Tomato Juice ( 46 ounces )
1/4 Cup Tomato Juice from above can
2 Medium Sweet Onions ( Chopped )
1 1/2 Cups Minute Rice
2 Eggs
Salt to Taste
Pepper to Taste
3 Cans Sauerkraut ( I use Sweet Bavarian )
1 Can Tomato Soup
1 Head of Cabbage ( Fairly Large )

Directions:
Bring a large sauce pan of water to boil. Take cabbage and place fork through the core and add to boiling water.
Blanch the cabbage, removing each leaf, and place on a towel to absorb the water. When the cabbage has been totally blanched, remove the large vein with a small parring knife.
In a large mixing bowl mix the ground beef, ground pork, chopped onions,minute rice, eggs, salt and pepper, and 1/4 cup of tomato juice and 1/4 can of tomato soup. Mix well.
In each leaf of cabbage place 2 to 3 tablespoons of the meat mixture. Roll the cabbage and tuck in the ends to form cabbage roll. Repeat until all leaves are full and in roll form.
In large baking pan that has been sprayed with Pam, place any remaining cabbage.
Place the cabbage rolls in pan.
Take the drained sauerkraut and cover the cabbage rolls.
Pour combined remaining tomato soup ad tomato juice over cabbage rolls
Bake at 350 degrees for 1 1/2 hours
You can use 2 Pounds of lean ground beef
