1 lb. firm tofu, drained
1/4 c. minced onion
1/4 c. minced green pepper
1 T. chili power
2 T. olive oil
2 T. minced parsley
1 tsp. prepared mustard
1/3 c. water
1/4 c. catsup
2 tsp. cider vinegar
2 tsp. brown sugar
Salt and pepper
Whole wheat buns, split and toasted

Directions:
In a large bowl, mash tofu. Add minced onions, minced green pepper and chili powder to bowl and mix well. Heat oil in pan over medium-high heat; add tofu mixture and cook for 5 minutes, stirring occasionally. Add all other ingredients, except whole wheat buns. Simmer 10-15 minutes, or until sufficiently dry. Serve on buns!
