2 cloves of garlic, minced
1 onion, finely chopped
1 T. olive oil
1 (16 oz.) can diced tomatoes
1 (16 oz.) can fat free or vegetarian refried beans
1 (4 oz.) can diced green chilies
Dash of cumin
6 eggs
Salt and pepper
1/4 lb. shredded Cheddar cheese

Directions:
Directions:
Preheat oven to 350ºF. Using a large fry pan, saute garlic and onion in olive oil until onions are semi-translucent. Add diced tomatoes, refried beans, green chilies, and cumin. Bring to a low boil. Remove from heat. Transfer bean mixture to a 9x13 in. baking dish. Crack eggs on top of bean mixture, salt and pepper to taste, and cover with cheese. Place in oven and bake for 15-20 minutes. Serve with tortilla chips! * Individual baking dishes are also fun to use. For a more festive presentation, you can top with shredded lettuce, diced avocados, and salsa.
