1 lb bag dried green split peas
7 c. water
2 tsp. salt
2 bay leaves
1 tsp. dry mustard
4 cloves garlic
2 sweet onions, finely chopped
3 stalks celery, chopped
2 carrots, chopped
1 potato, peeled and chopped
Pepper
3 T. vinegar

Directions:
Rinse dried peas, place in a large pot with 7 c. water, salt, bay leaves and dry mustard. Bring to a boil, then reduce heat to simmer. Meanwhile, saute garlic, onions and celery, until wilted. Add cooked garlic, onions and celery to soup pot. Add chopped carrots and potatoes. Season with plenty of pepper. Simmer for 45 minutes. Stir in vinegar. Serve! *This can be served with a dollop of sour cream; or for the meat lover in the family, top with chopped bacon.
