1 can black eyed peas, drained
1 can corn, drained
1 bunch green onions, chopped
1/2 bunch cilantro
6-8 tomatoes
1 avocado

Dressing
3 Tbsp red wine vinegar
1 tsp olive oil
2-3 cloves garlic
salt n' pepper to taste

Mix dressing separately and gently toss together. Serve with nachos.

Aunt Sharon actually uses "shoepeg corn" which you can only buy in the States. It is a bit smaller and more tender but peaches and cream is a good substitute.
