1 (1 1/2-2 lb.) boneless pork shoulder roast
1 1/2 T. Jamaican jerk seasoning
1/4 tsp. dried thyme
1 c. water
1 1/2 T. freshly squeezed lime juice
6-8 (8 in.) flour tortillas
Crisp lettuce leaves, optional
1 1/2 c. chopped fresh mango or pineapple, or frozen
1 1/2 med. red or green bell pepper, chopped

Lime Mayo:
1 c. mayonnaise
1/2 c. finely chopped red onion or shallots
1/2 tsp. lime zest
2 T. fresh lime juice
1 tsp. minced garlic

Directions:

Trim fat from pork roast. Rub with jerk seasoning. Put in a slow-cooker and sprinkle with thyme. Add water. Cover and cook on low heat for 8-10 hours or on high for 4-5 hours. Prepare lime mayo by mixing mayonnaise, lime zest, 2 T. lime juice and garlic and chill. Remove meat from cooker when done; discard liquid. Shred meat, place in a bowl, and stir in 1 1/2 T. lime juice. To serve: line tortillas with lettuce, add meat, top with mango or pineapple, pepper and lime mayo. Fold tortillas burrito style! Delicious! Serves: 6-8.
