1 Tbsp. plus 1 cup butter divided
2 1/4 cups packed brown sugar
1 can (14 oz) sweetened condensed milk
1 cup corn syrup

Grease a sheet pan with the tbsp of butter. In a heavy saucepan over medium heat, melt remaining butter. Add brown sugar, milk and corn syrup. Cook and stir until candy thermometer reads 250º (hard-ball stage). Pour into prepared pan. Cool completely before cutting. *check thermometer beforehand. Boiling water will read 212 º. Adjust if not accurate.

Sometimes I make this and get it to a soft-ball stage and pour it over popcorn. It makes the best ooey gooey carmel popcorn.
