1 1/2 lbs Sweet Potatoes
2 tbsp olive oil
1 tbsp Sesame Seeds
2-4 Scallions finely sliced
2 Tbsp light soy sauce (light as opposed to dark, not "lite")
2 tsp Dijon mustard
2 tsp honey

Directions:
Directions:
Preheat oven to 400º
Peel sweet potatoes, cut into chunky sticks
Toss potatoes with olive oil, place in shallow roasting pan. Sprinkle with sesame seeds
Bake for 45 minutes until crisp and brown
Mix Soy sauce, honey, and mustard to create a dressing
Turn sweet potatoes into a serving dish and cover with dressing, sprinkle scallions, and serve.
