Manicotti Recipe

8 Manicotti Noodles



Filling

1 lb Italian Sausage
2 Eggs
2 c Mozzarella Cheese, grated
1 c cottage cheese
1/2 c Parmesan cheese
1/4 c dry bread crumbs
10 oz frozen chopped spinach
1/8 tsp nutmeg
1/8 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper



Sauce

28 oz Stewed Tomatoes
1 c chopped onion
1 bay leaf
1/2 tsp Oregano
1/2 tsp Basil
2 1/2 oz tomato paste (5 little cans)


Topping

1/4 c Parmesan cheese

Directions:
Boil noodles 5-6 minutes (until el dente), rinse in cold water, drain and set aside

Take casing from sausage, brown (like ground beef). Beat eggs lightly in a bowl, add remaining filling ingredients. Add browned sausage to egg mixture.
Stuff mixture into manicotti, being careful not to tear manicotti. Set aside.

Combine all sauce ingredients in a pot and bring to boil (I puree the stewed tomatoes). Simmer uncovered, stiffing often, until thickened. Discard bay leaf. Cover bottom of 9x13 pan with sauce. Layout stuffed manicotti noodles, and cover noodles with remaining sauce.

Bake in a preheated 350º oven for 20 minutes. Remove, and sprinkle with Parmesan cheese. Bake for 10 more minutes.
