1 c. bread crumbs-soft, Italian style
1/2 c. beef broth
1 egg, beaten
4 t. dried onion
1 t. salt
1/4 t. Italian seasoning (omit if using Italian bread crumbs)
1/4 t. black pepper
1-1/2# ground beef
4 c. shredded hashbrowns, frozen
1/3 c. Parmesan, grated
1/4c. parsley
1 t. onion powder or salt
Sauce:
1 8oz can tomato sauce
1/2 c. beef broth
2 t. prepared mustard

Combine crumbs, broth egg and seasoning. Let stand 2 mins. Add beef and mix. On wax paper, pat meat into 10 inch square. Combine frozen hasbrowns, cheese and parsley and onion powder or salt. Spoon over meat. Roll jelly-roll style removing wax paper as you go. Pinch edges and seal. Place seam side down in ungreased shallow pan. Combine sauce ingredients and pour over loaf. Bake at 375º for 40-50 mins. Sprinkle with more Parmesan and serve.
