1/2 cup olive oil
1/2 cup minced garlic
1/2 cup chopped parsley
1 cup grated romano cheese
1 tsp. pepper
1 leg of lamb (5 lbs)

Directions:
Directions:
Cut deep 1" pockets all over the lamb and stuff liberally with mixture.

In a small mixing bowl, combine first 5 ingredients. Fill slit pockets in lamb with mixture. Put any remaining mixture on top of the lamp.
Bake at 325º for 2 hours, until tender.

Baste regularly while baking.
