1/2 pound crawfish, boiled and cleaned
1 bunch green onion, chopped
1/4 medium bell pepper, chopped
1 clove garlic, crushed
1/2 stick margarine
1 package Martha White Mexican cornbread mix
1 cup cheese (Colby and Cheddar)
1/2 can whole kernel corn, drained

Directions:
Directions:
Preheat oven to 400 degrees. Saute onion, bell pepper and garlic in melted margarine until soft (looks like a lot of margarine but you need it for the cornbread). Add crawfish and cook until heated through. Mix the cornbread using the directions on the box. Stir in the cheese, corn and crawfish/veggie mixture. Pour all into a baking dish sprayed with cooking spray. Bake 30-35 minute at 400 degrees. Let sit 15-20 minutes before cutting.
