1/4 cup butter
1 small onion, finely chopped
1 cup cooked long grain rice
1 tablespoon fresh dill
1 tablespoon lemon juice
1 lb puff pastry, thaw if frozen
1 lb salmon filet, skin and cut into 2 inch pieces
3 eggs, hardboiled and chopped

beaten egg for glazing
salt and pepper

Preheat oven to 400º

Cook rice
Saute the butter and onion, until the onions are soft not brown
Stir in cooked rice, dill, lemon, salt and pepper

Roll out the puff pastry (usually three rolls come in a package, I use just one for this).
Lightly grease a cooking pan and place the puff pastry open on the pan.
Sprinkle rice over half of the puff pastry.
Arrange the salmon on top of the rice.
Sprinkle the hardboiled eggs on top.

Brush the edges of puff pastry with beaten egg mixture and fold over the filling to make a rectangle.
Press the edges together to seal.
Glaze the top of the puff pastry with the rest of the egg mixture.
Slice a few small holes in the top for the steam to escape.

Cook for 40 minutes.
After 30 minutes, cover with aluminum foil.

To serve slice it horizontally in pieces.
