8 oz. Orzo, cook, drain and chill with olive oil to keep it from sticking
1/4 cup red bell pepper, diced
1/4 cup green bell pepper, diced
1/2 cup green onions, sliced
8 oz fresh asparagus, chopped (boiled 4 minutes)
1 cup cherry tomatoes, halved
1/2 cup pitted Kalamata olives, chopped
2 tablespoons fresh dill, chopped
1/2 feta cheese, crumbled

Salad dressing:
1/4 cup olive oil
1/2 cup red wine vinegar
2 tablespoons fresh lemon juice
1/4 cup red onion, diced
1 clove garlic, crushed
2 tablespoons capers
1 tablespoon oregano
1 tablespoon fresh mint, chopped
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
For salad dressing, combine all ingredients and whisk.

In a large mixing bowl, combine all salad ingredients except feta cheese. Prepare salad dressing. Pour over orzo mixture and toss gently. Cover and chill.

To serve, arrange on a large platter and sprinkle with feta cheese. Garnish with additional tomatoes if necessary.
