Directions:
Directions:
Season roast with salt, pepper and garlic salt.
Pour 3 tbsp. oil in pressure cooker and heat.
Place roast in pan and brown both sides.
Put grate in cooker under roast to prevent scorching the bottom of the roast.
Sprinkle onion soup mix on roast (if you have 2 pieces of roast in pan, put soup mix on both layers).
Add chopped onion (optional).
Add 2-3 cups of water depending on size of pressure cooker.
Once pressure cooker comes up to full pressure, turn down heat so it jiggles slowly and cook for approximately 1 hr depending on the size of the roast. (Continued on next page.)

Run pressure cooker under cool water to release pressure.
Remove roast, place on a platter keeping juices in the cooker.
Make gravy by mixing flour and water together (4)tbsp. flour to 1 c. water)
Bring juices in cooker to a boil.
Stir in flour mixture. Cook and stir continuously over med. high heat until gravy is thickened.
Depending on how much gravy you want, you may have to add more water and thicken accordingly.

Personal Notes:
There are other cuts of meat you can buy but the 7-bone Chuck Roast is the most tender one.
