Pancakes:

2 c self rising flour
1 ripe banana
1 egg white
3 packs of Sweet N Low
2 t vanilla flavoring
milk

Apple pie filling:

4 to 6 med sized cooking apples
Cinnamon and Sweet N Low to taste

Directions:
Directions:
Mash banana well. Mix flour, egg white and gradually add milk to pancake consistency (about a cup). Add banana. Let sit for 5 minutes.

Peel and slice apples. Cooking in sauce pan with enough water to cover apples. Add cinnamon and Sweet N Low when apples are almost done. Thicken with a paste of cornstarch or flour. Stir until smooth. Set aside.

Make pancakes.

Serve by laying apple filling between pancakes and top with filling. Top with a generous dollop of light or fat free whipped topping
