1 box Uncle Ben's Wild Rice and Long Grain Rice
1 lb. Owen's Sausage (or your choice), ground
1 med. green bell pepper, chopped
1 small jar pimento, chopped
7 green onions, chopped (green and white separated) (divided use)
1 stalk celery, finely chopped
1 small can chopped black olives
5 fresh mushrooms, whole (or 1 jar)
1 tsp. poultry seasoning
1/2 cup milk
1/2 can beef broth

Directions:
Directions:
Cook rice as directed on box. Saute sausage and drain. Melt butter in a saucepan, saute bell pepper, green onion whites, and celery. Add remaining ingredients and stir to incorporate. Place all in a large casserole dish and cook for 45-50 minutes at 375º. Last 5 minutes, salt to taste and add green onion tops to taste.

You can use regular wild rice too. Combine 4 oz. wild rice (Minnie Sota is the supremo!) 2 3/4 cups water, 1 tsp. salt in a saucepan. Bring to a boil, reduce heat to low or medium-low. Cook one hour, stirring occasionally until rice is tender. The longer this sets, the better the flavor.
