2 tsp. olive oil
1 cup long-grain rice (white or brown)
3/4 cup green onion, chopped
1/4 cup celery, chopped
1/4 cup green pepper, chopped
1 large clove garlic, minced
1 1/2 cups chicken broth
1/2 cup tomato sauce
1/2 cup canned tomatoes, diced
2 tbsp. cumin (or to taste)
3 tbsp. chili powder (or to taste)

Heat oil in 12" skillet. On medium heat, saute rice, onion, celery, green pepper, garlic. Stir constantly until rice and vegetables are all coated with oil and vegetables are softened. Stir in broth, tomato sauce, tomatoes and bring to a simmer. Add the cumin and chili powder, cover and continue simmering for 30 minutes. Stir, remove from heat, re-cover and let stand for 10 minutes before serving.

This is so easy and goes very well with pork chops or any pork dish (like baked spare ribs) and of course Mexican or Tex-Mex dishes.
