1/3 cup fresh lemon juice
1/4 cup canola oil
1/4 cup reduced-sodium soy sauce
1 tbsp. Dijon-style mustard
2 cloves garlic, minced
1/2 tsp. pepper
6 boneless, skinless chicken breasts
Canned pineapple rounds, quartered
1 bell pepper, sliced thick
1 onion, thin-sliced rings

In a medium bowl, combine lemon juice, canola oil, soy sauce, mustard, garlic and pepper; reserve 1/4 cup of mixture for basting. Place remaining marinade and chicken in a zip-lock bag. Marinate in refrigerator 2 to 8 hours (whatever fits in your schedule).

Remove chicken; discard marinade. Grill 6 to 8 minutes on one side. Flip over to grill the other side and place pineapple, bell pepper slices, and onion slices on each breast. Grill another 6 to 8 minutes, or until internal temperature reaches 170º basting occasionally with reserved marinade.

I like to use the George Foreman Grill for this. I place the chicken in the grill, top with pineapple, bell pepper and onion rings. Close the grill and cook for 6 to 8 minutes. And voila! It's ready! Serve with rice.
