8-10 long chili peppers with stems
Extra Virgin Olive Oil
1 small red onion, finely chopped
1-2 cloves garlic,minced
White vinegar
salt, pepper
minced parsley

Directions:
Directions:
On an oiled aluminum foil pan (make your own with foil), place washed and dried chili peppers next to each other. Drizzle with a little olive oil.bake at 450 degrees till roasted-about 15-20 minutes. Peppers will have black puffed spots. Gently slide roasted peppers into a brown bag and close the bag; let cool. Wear latex gloves (in case of heat in the peppers) and peel; outer skin should be easy to peel. Put peeled peppers on a plate. Finely chop the red onion and parsley, mince the garlic, and pour over the peeled peppers. Salt and pepper to taste. Splash with a little white vinegar, drizzle with olive oil. Cover and chill. Serve as appetizer along with warm pogaca and some meza if not fasting.
