20--25 potatoes, peeled and cut into chunks
1 cup sour cream
3 oz cream cheese (room temperature)
1 - 2 cubes butter or margarine room temperature
salt & pepper to taste
May need to add a little milk while mixing for moisture

Directions:
Directions:
Lightly butter (I use Pam) a 9" X 14" glass baking dish. Cook potatoes in salted boiling water until tender, then drain. Using electric mixer, mash the potatoes. Mix in all ingredients and transfer to baking dish. (This can be made up to 2 days ahead) When ready to prepare dinner, slice some butter or margarine and put on top of potatoes. Bake at 400º for about 30 minutes or until heated through and light brown on top. I sometimes throw a little grated cheese on top also.

This serves a lot but you can reduce the quantities

I usually use garlic salt rather than regular salt. Just keep adding, mashing and tasting.
