6 plum tomatoes cored and cut into 3/4 in. pieces
2 fennel bulbs halved cored and thinly sliced crosswise. Reserve fronds for garnish
1/2C dry white wine Salt and pepper to taste 4 boneless skinless chicken breasts about 8 oz. each

Directions:
In a large deep heavy skillet combine tomatoes,fennel and wine and season with salt and pepper. Arrange chicken breasts in a single
layer on top of vegetables leaving as much space as possible and season. Bring mixture to a boil;
reduce heat to medium low,cover and simmer gently 15-20 minutes until chicken is opaque throughout. Slice chicken breasts and serve on top
of vegetable mixture. Garnish with fennel fronds.
