1/2 c. shortening
5 T. water
1 tsp. baking soda
dash of salt
2 eggs
1 c. sugar
1 tsp. baking powder
2 c. sifted flour
1 c. mashed bananas
nuts if desired

Directions:
Directions:
Cream sugar, shortening, eggs, water, baking soda, salt, flour and baking powder. Add bananas. When mixed, add nuts if desired. Grease pan. Bake 1 hour at 375º if using large loaf pan; bake 45 min. at 350º if using two small loaf pans.

I love this recipe my mom would make. It's a great way to use those bananas that got too ripe before you could eat them. You can also substitute a little apple sauce if you don't have enough bananas on hand to make 1 full cup.
