1 pie crust
6 apples (wine sap or jonathans are best)
4 T. flour
1 T. butter
1 c. sugar
1 tsp. cinnamon
1 T. milk
1 tsp. sugar

Directions:
Directions:
Line a glass pie plate with pie crust (glass is best). Peel, core and cut apples. Mix in a large bowl the apples, flour, 1 c. sugar and cinnamon. Place mixture in pie plate. Cut 1 T. butter into little cubes and place on top of apple mixture. Cover pie with pie crust (be sure to vent with cuts in top). Bake at 400º for 50 minutes. 5 minutes before done, pull out pie and poor 1 T. milk over top and sprinkle with 1 tsp. sugar. Bake until golden and bubbly. Let cool down before serving.

The pie filling recipe is my Great Grandmother Sauer's recipe. She would always make an apple pie when my Dad would come to visit. Apparently this tradition started when my Dad started dating her granddaughter.

Great Grandma would make her own pie crust and I never learned that skill. Years later while working in Marshall Field's restaurant in Milwaukee an old cook (Cathy) taught me the secret of making a store bought crust look home made; pull it out of the oven about five minutes from completion and add a tablespoon of milk and sprinkle sugar on top, then return to the oven. She was right.
