1 lb. Polska Kielbasa Polish sausage, sliced in dices
1-1/2 to 2 lb. sauerkraut, partially drained;
1/2 to 3/4 onion, chopped;
Caraway seeds (optional)

Directions:
Directions:
Saute onion in little olive oil in large skillet. Put sausage in skillet with onion and lightly brown because sausage is already pre-cooked. Add sauerkraut with some liquid from package. Mix well. Should be moist. Sprinkle caraway seeds (approx. 1 Tablespoon). Simmer in skillet for about 30+ minutes.

Serve sausage/sauerkraut with small boiled red potatoes that have been boiled with skin on. Once soft but not mushy, drain potatoes, slice in half and add a little butter and/or olive oil, salt and pepper and chopped parsley.

This meal is complete with mustard, dill pickles and applesauce.

Note: This meal was our kids' first try of a recipe with sauerkraut, and they liked it. Eating a Reuben sandwich was no sweat after this!
