1/2 kg (about 3 1/2 cups) unbleached flour
2.5 dl (one cup + 1 T) warm water

In a large bowl, mix in the warm water slowly with your hands into the flour mixture. The dough is ready when it no longer sticks to the bowl. Sprinkle some flour over a round table covered with a clean sheet. Center the dough and roll out gently with a floured rolling pin into a circle. With your knuckles under the dough, start to pull gently until the dough is thin and covers the table. Cut to size for whatever pan you need. Put each leave on a piece of aluminum foil and dry out for 7-10 seconds on top of a burner (medium heat); turn over and do other side. Stack with wax paper separating each leave. Use in any recipe calling for phyllo.
