2 t. olive oil
1/2 c. chopped prosciutto or ham (about 2 oz.)
1 c. chopped onion
3/4 c. chopped celery
3/4 c. chopped carrot
1 garlic clove, minced
1 c. water
2 (19 oz.) cans cannellini beans or other white beans, undrained
1 (15.75 oz.) can fat-free, less-sodium chicken broth
2 bay leaves
2 T. minced fresh parsley
2 T. sherry (optional)
1/4 t. black pepper

Directions:
Directions:
1. Heat oil in a large stockpot over medium heat. Add chopped prosciutto, and saute 2 minutes. Add chopped onion, celery, carrot and minced garlic; saute 2 minutes or until soft.
2. Add water, beans, broth and bay leaves, and bring soup to a boil. Partially cover, reduce heat and simmer 20 minutes.
3. Add parsley, sherry, if desired, and pepper; cook 1 minute. Discard bay leaves.
