olive oil
1 package of mushrooms (optional)
2 cans artichoke hearts, cut in half
juice from 1 lemon
1 cup chopped basil
1 package of baby spinach
1 container of creme fraiche (this is located near the cream cheese at Trader Joe's)
2 packages of Lemon chicken, cut in 1 inch pieces (in refrigerator section at TJ's)
Salt and pepper to taste
Parmesan cheese

Heat olive oil in pan. Add mushrooms and artichoke hearts and sauté about 3-4 minutes. Add lemon, basil, spinach and crème fraiche. Mix all ingredients together. Cook spinach down (about 5 minutes). Add chicken and simmer until chicken is heated through. Add salt and pepper to taste. Serve with rice or over noodles and sprinkle with parmesan cheese.
