BBQ Chicken Sandwiches Recipe

2 1/2 T olive oil
2 cups sliced onions (1 purple onion)
1 T brown sugar
3 T apple cider vinegar
1/2 cup bbq sauce (any kind)
1 T water (apparently this is a key ingredient???)
1/4 t pepper
3 cups cooked chicken

Directions:
Directions:
Heat olive oil.
Saute onions for 7 minutes
Add brown sugar and vinegar
Saute for 2 minutes
Stir in BBQ sauce, water, pepper and chicken
Heat 5 minutes.
Feel free to add more BBQ sauce if needed.
Serve on Hoagie Rolls or Hamburger Buns.

I usually put frozen chicken in the crockpot in the morning with some bbq sauce for 8 hrs.. Then it shreds really easily and the chicken is done.
Also, I buy the purple onions in bulk at Costco and chop all of it and put it in individual ziploc baggies and freeze.
