3-4 tbsp grapeseed oil
1 lb small red potatoes
1 red or sweet onion
1 sprig of fresh rosemary
1/4 tsp lemon pepper (or Trader Joe's 21 Seasoning Salute)

Directions:
Directions:
Preheat oven to 425 degrees.

Add 1-2 tbsp of grapeseed oil to a pyrex baking dish and coat the bottom & sides of the dish.

Wash and slice the red potatoes in half and place in the baking dish. Peel the onion, cut in half, then slice somewhat thinly, and distribute in the baking dish. Strip the sprig of fresh rosemary and sprinkle over the potatoes and onions. Drizzle another Tbsp or two of the grapeseed oil over the potatoes and stir until the potatoes and onions are coated. Salt to taste (1/8-1/4 tsp). Sprinkle (1/8-1/4 tsp) lemon pepper (or a few shakes of Trader Joe's 21 Seasoning Salute) over the potatoes. Place in 425 degree oven for 25-35 minutes, until potatoes are soft and the onions are browned.

If you are cooking these potatoes along with a roast, you can cook these a little longer at a lower temp, as long as you finish by browning them for a few minutes at a high temp.
