Spaghetti noodles for four servings
2 large tomatoes or 1 cup small type
1 ball of fresh mozzarella cheese (8 to12 oz.)
1 bunch of cilantro
1 to 2 tablespoons extra virgin olive oil

Directions:
Directions:
Bring a large pot of salted water to a boil over high heat and cook the spaghetti. Meanwhile, in a large bowl, tear up the tomatoes. fresh mozzarella cheese, and leaves of the cilantro. Drain the pasta, rinse with hot tap water, and immediately pour over the contents of the bowl so that cheese melts. Add olive oil, salt, and pepper to taste. Serve immediately. Microwave for 30 seconds if needed.
