1 can of condensed Cream of Chicken Soup (can also use 99% fat free version)

1 1/3 cups of water

3/4 cup of uncooked white or brown rice

2 cups of fresh or frozen vegetable of your choice

4 skinless, boneless chicken breast halves (about 1 lb)

1/2 cup of shredded cheddar cheese

add: onion powder, black pepper, garlic powder to taste (about 1/4 teaspoon)

Preheat oven to 375º

stir soup, water, rice, seasonings, and vegetables in shallow baking or casseroles dish.

add the chicken on top (i usually cut a slit in the chicken and stuff it with stuffing OR cheese and broccoli)

cover the baking dish and bake for 50 minutes or until the chicken is cooked completely and the rice the tender. Top casserole with 1/2 cup of cheddar cheese (i also add a sprinkle Parmesan) and let sit for 10 minutes before serving.
