1/4 cup sugar
1/2 cup pecans (halves or pieces)

4 cups fresh spinach, washed and drained
6 oz sliced fresh mushrooms
1 large can (12 - 14 oz) mandarin oranges
3 or 4 green onions, chopped

3 T vegetable oil
1 T red wine vinegar
1/4 tsp salt
Pepper to taste
Dash of Tobasco

Directions:
Directions:
In a large pan on medium heat, stir pecans with sugar until all of the sugar is melted and coating the pecans. Spread on wax paper to cool.

Toss the spinach, mushrooms, chopped green onions, and mandarins (or you can lay the mushrooms and mandarins on top for presentation). Add candied pecans.

Mix together oil, red wine vinegar, Tobasco, salt and pepper as the dressing. Pour on dressing just before serving.
