6-7 large (4 corner) green peppers
2 lbs. ground beef
1/3 cup chopped onion
1 1/2 cup cooked rice
1 tsp salt
1/4 tsp garlic salt
1 15 oz can tomato sauce or I often used soup
6-7 slices sharp American cheese
shredded cheese

Remove tops of peppers and clean out seeds and membrane and wash thoroughly. Par boil peppers by cooking in boiling salt water for 5 minutes, drain (skip this step for firmer peppers). Preheat oven to 350º

Brown beef and onion in skillet until onion is tender/ drain. Add salt, garlic, rice, and 1 c. sauce; heat through.

EACH pepper: put slice of cheese on bottom and fill with meat mix. Place in 8x9 casserole dish and pour remaining sauce over each pepper. Cover and bake for 45 minutes. Uncover, add shredded cheese to top and bake uncovered for 10 minutes.
