2/3 c. shortening
2 2/3 c. sugar
4 eggs
2/3 c. water
3 1/3 c. all purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground cloves
2 tsp. vanilla
3 c. shredded zucchini
2/3 c. coarsely chopped nuts, optional
2/3 c. raisins, optional

Directions:

Heat oven to 350ºF. Grease 2 loaf pans, 5x9x3 in. or 3 loaf pans, 4.5x8.5x2.5 in. Mix shortening and sugar in large bowl. Add eggs and water. Blend in flour, baking soda, salt, baking powder and cinnamon. Blend together cloves and vanilla, then add to mixture. Stir in zucchini, nuts and raisins. Pour into pans. Bake about 1 hour and 10 minutes. Check with a toothpick inserted in center to see if it comes out clean. Cool slightly. Loosen sides and remove from pan. Cool completely before slicing. Wrap and refrigerate no longer than 10 days.
