1/2 cup rice flour
1/4 cup butter
1/4 cup potato starch
1/2 cup brown sugar
1/4 cup tapioca flour/starch
1/2 cup sugar
1/2 cup cocoa
1 egg
1/2 tsp. baking powder
2 tsp. vanilla
1/2 tsp. salt
1/4 cup hot water
1/4 tsp. xanthum gum
or arrowroot
1/2 cup chopped walnuts (optional)
1 tsp. instant coffee (optional)

Directions:
Directions:
Preheat oven to 350 degrees. Spray 8-inch square pan with cooking spray.
Stir together flours, cocoa, baking powder, salt, xanthum gum, instant coffee.
Beat butter, sugars, egg and vanilla with electric mixer. Add dry ingredients and hot water (I add a little extra hot water). Mix until just blended (mixture will be thick). Stir in nuts. Spread batter in pan.
Bake 20 minutes at 350º
