4 tablespoons butter
3 eggs
1 cup flour
1 cup milk
1 teaspoon salt
dash of pepper
1 pound grated/shredded Monterey- Jack Cheese
2 packages of frozen chopped spinach (thawed)
1 heaping teaspoon minced onion

Directions:
Directions:
Thaw the 2 boxes of chopped spinach before
starting recipe. Drain the spinach. (I use a colander.)

Preheat the oven to 350 degrees. In a 9 by 13 casserole dish, melt the 4 tablespoons of butter in the microwave. Remove pan from microwave.

In a bowl, beat the eggs. Add flour, milk, and seasoning. Mix well. Add cheese, drained thawed chopped spinach, and the onion.

Pour into the baking dish with the melted butter, and bake for 35 minutes. (The edges of the spinach cheese squares start to brown when they’re done.) Let the casserole sit for 5 minutes before trying to cut it into squares to serve.

I have put the ingredients together the day before I needed it, covered it and kept it in the refrigerator, and it still was yummy after baking it for 35 minutes.
