1 package navy beans
1 chopped onion
1 chopped celery (optional)
4 meaty ham hocks
1 bay leaf
1 t salt
1 t pepper
oregano

1 Jiffy cornbread mix

Directions:
Directions:
Soak beans overnight in 4 quarts of water. (If you forget to set the beans out, you can simmer the beans for one hour.) Rinse thoroughly two times. Fill large soup pot with water and beans. Water should be about 2 inches above the beans. Set heat at low to begin simmering beans. Sweat chopped onions (and celery, optional) in skillet until juices come out and vegetables are opaque. Add to the pot of beans. Add Ham hocks, bay leaf, 1 teaspoon each salt and pepper. Simmer for at least 2 hours. Longer if you want softer beans that will help the liquid become pasty. Remove from heat. Remove Ham Hocks, cook ham hocks and shred meat from hocks. Add meat to bean soup mixture. Add salt and pepper to taste and oregano.

Make cornbread from Jiffy mix. I like to add 1/2 teaspoon to the dry mix before adding liquid ingredients. Sweetened cornbread is a nice contrast against the bean soup. Serve Ham and Bean soup over warm buttered corn bread. This makes a large pot. So I always froze half for another time for a quick meal. When the girls were growing up, this was one of their favorite meals.
