6 tbsp. butter
1 1/2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 eggs
2/3 c.brown sugar
1 1/2 c. chunky applesauce

Directions:
Directions:
In a small bowl, melt butter on high for 30 seconds set aside to cool
slightly. Mix flour, baking powder, baking soda, cinnamon, and salt into a large mixing bowl. In another bowl, whisk together eggs & brown sugar, stir in applesauce and melted butter until the mixture is smooth. Pour
apple mixture over the flour mixture. Mix with a wooden spoon until
combined. Fill muffin pan about 2/3 full with batter. Bake at 375 degrees for 20 minutes or until light brown. Makes 12 muffins
