6 medium or large artichokes
1/2 lb. ground beef
1/2 c. chopped onion
Oil
2 Tbsp. chopped parsley
3/4 c. soft bread crumbs
1 egg
Salt and pepper
Dash of allspice
1 tomato
2 Tbsp. lemon juice

Directions:
Directions:
1. Wash artichokes, trim steaks, and pull off tough outer leaves. Cut off the top third and spread artichokes open by placing upside down on a table and pressing stem ends firmly. With teaspoon, dig out center leaves and fuzzy portions.

2. Brown beef and onion in about 2 tablespoons oil. Remove from heat; stir in parsley, bread crumbs, egg, 1/2 teaspoon salt, pepper and allspice. Fill centers of artichokes with meat mixture.

3. Place artichokes in deep baking dish. Top each with thin slice of tomato. Put 1 inch boiling water in baking pan. Top with salt and lemon juice. Cover closely. Bake at 350ºF for about 1 1/2 hours or until tender.
